Ingredients:
- 2 large eggs
- 2 cups of water
- 2 1/4 cups of self rising flour
- 2 teaspoons sugar
- 2 teaspoons of dry instant vanilla pudding mix
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- Mix the eggs and water in a large bowl.
- In a separate bowl, mix together the dry ingredients.
- Slowly stir the flour mixture into the egg mixture, then add the vanilla.
- Heat a nonstick pan sprayed with non stick spray over medium-low heat. Pour about 1/3 cup of batter and cook for 1 to 2 minutes or until bubbles appear. Turn with spatula and cook until golden brown.
- Serve immediately while warm with syrup, berries, etc.
