These are the easiest and yummiest onion rings you can make from scratch at home. The ice bath helps make them crisp, so while you could skip this step, I recommend doing it.
Ingredients:
- 3 medium onions (I used Vidalias, but any sweet onion will work nicely)
- 2 cups all purpose flour
- 2 teaspoons salt
- 1 teaspoon baking powder
- 1 tablespoon paprika
- 2 cups milk
- 1 egg, well beaten
- Make an ice bath in a large bowl with about two cups of ice cubes and the rest water.
- Slice the onions about a quarter inch thick, separate into rings, and place in the ice bath.
- Mix the next 4 ingredients in a medium bowl.
- In a separate medium bowl, mix the last two ingredients.
- Heat either a deep fryer or a skillet with about 2 inches of oil over medium heat.
- Dip the onion rings first in the flour mixture, then the milk mixture, and then back in the flour mixture.
- Fry the rings in batches (turning once if using a skillet) for about 5 minute, until a light golden brown. Drain on a rack so they don’t get soggy.
Sauce:
Ingredients:
- 3 teaspoons mayo (I used Duke’s)
- 1 teaspoon mustard (French’s)
- 1 tablespoon maple syrup
- 1 tablespoon chili powder
- 1 teaspoon paprika
Just mix all ingredients together. All of them can be adjusted for taste or amount.
